The Scene
Tucked away in the elegant Chateaux condominium hotel, this had-to-be-French restaurant provides a unique dining option for those skiing Deer Valley or doing business in Park City. Upscale but casual with white linens, copper salt-and-pepper shakers and cast-iron serving ware, it's a seductive place for a romantic dinner.

The Food
Traditional bistro cuisine with contemporary touches includes specialties from the wood-burning oven like slow-roasted herb chicken and braised lamb shanks in addition to pastas, soups and salads. Signature dishes inspired by classic French preparation include seared foie gras and escargots. The mussel and saffron "cappuccino" is delightful; the seared foie gras served on a diver scallop is decadent. The cassoulet toulousain with white bean, duck confit, bacon, lamb-garlic sausage, tomato and thyme will transport you to Provence. Leave room for crème brûlée or gâteau au chocolat.

This sophisticated, subdued dining room features taupe walls, a pastoral mural, and gilt-framed landscapes. Guests revel in classic French dishes updated and improved upon by the chef. For sublime dining, the degustation menu offers six courses that include demitasse of rock shrimp bisque, sweet chestnut glazed partridge, and pear and currant parcel. An à la carte menu offers additional options. Celebrated dishes also include a hearty cassoulet, seared foie gras on a diver scallop, and mussel and saffron cappuccino soup. The restaurant also boasts 250 wines available by the glass, and a daily selection of 18-25 cheeses, including international options. A sommelier is on staff to help with wines, and most courses are wine-paired as well. Groups may also request the chef's table, which sits in a circular bay with views of the kitchen and the resort. These fortunate diners are presented a menu customized to each diner's tastes and desires. Service, as you might expect, is impeccable. Adjacent to the restaurant is Buvez, an upscale bar and lounge. Bistro Toujours may be closed in spring and fall – call ahead.
